Gluten Free Focaccia Bread

Breads are tricky. But I've learned two things. One, the gluten free flour matters when working with yeast. Two, patience I guess is important. Focaccia happens to be my favorite bread to make and eat. Have at it, you won't be disappointed unless you are impatient like me.
Ingredients

3.5 Cups GF Flour (Caputo GF flour makes a difference)

1 Packet Instant Yeast

1 Tbsp Baking Powder

2 Cups Warm Water (110 degrees)
w/ 1 Tbsp Honey mixed in

1 Tsp Apple Cider Vinegar

1/2 Cup Oil

1 Tsp Salt
- OPTIONAL, but worth it:
- 1 Tsp Fresh Rosemary
- 1 Tsp Coarse Salt
- 1 Tsp Garlic Powder
Directions
Preheat oven to 200 degrees. Turn off oven once heated.
Mix all essential ingredients together.
Let proof for 30 minutes in 200 degree oven.
Remove and set oven to 400 degrees.
Put in greased 9x13 pan and massage with fingers, creating dimples.
Add all optional spices & drizzle more olive oil over top.
Bake for 20 - 30 minutes at 400 degrees.
