Gluten Free Pancakes

My mom loves loves loves her pancakes. I think she feels bad for me that I have to eat Gluten Free pancakes because she just loves the original that much. Well, here’s a recipe that I think will put her favorite GLUTEN FULL pancakes to shame. They are not only fluffy but they are super tasty, you may not even need the maple syrup. Ingredients

1 Cup Gluten Free Flour

3/4 cup oat Milk

1 Egg
-
1 tablespoon Baking Powder

2 tablespoon sugar

3 TBSP Melted Vegan Butter

1 tablespoon vegetable oil

1 tsp Vanilla
-
¼ tsp salt
Directions
Mix all dry ingredients in a medium bowl with a whisk.
Mix wet ingredients (egg, oat milk, butter, oil, and vanilla) in a separate small bowl with a whisk as well.
Add wet ingredients to dry and spoon batter onto a hot buttered pan.
Grease a pan and when it begins to bubble add 4 ounces of the batter (you may want to add more butter in between each set of pancakes...just so the pan doesn't burn your beautiful golden pancakes)
When edges start to solidify after about 3-4 minutes, flip pancake and cook until cooked through, about 4 additional minutes.
Super simple! Super tasty!
