INSTANT POT: CHICKEN PICCATA

I feel like this is the only way I'm ever going to cook chicken again. I'm going to walk you through this but if you read our chicken marsala recipe, it's a lot of the same but different. I'm sure you hate me for saying that. Not everyone will love you, that's a saying right?
I'm going to jump right into this recipe. It's like the marsala, it's good!

Ingredients

Instant pot - must have
-
1 tablespoon of olive oil

Chicken breasts (I had four thinly sliced. If they are not thin, you gotta pound them out)

1 cup of GF flour

2 eggs, whisked

Gluten Free panko or crumbs! I found panko and I got so excited that I bought it and was like amped to try. It tasted good but GF crumbs work too.

2 tsp of garlic minced

3/4 cup of chicken broth (I always feel weird about cooking chicken in chicken but it tastes so much better and you need liquid to use in the instant pot, I'll get over it)

1/4 cup lemon juice

1 tsp oregano
-
1 tsp of basil
-
4oz jar of capers, drained

Salt and pepper to taste
Directions
Guys we are gonna brown those breasts! Turn your Instant Pot on to saute and add the olive oil. While that's heating up....
Let's dip each breast in GF flour, then in the egg bath and then in the panko crumbs. If you look at the pics above, it's a three step process but it's very gratifying, I promise. I add my salt and pepper to the GF flour but you can sprinkle that on the chicken directly. Up to you. We all have to make our own choices.
After its floured, egged and panko'd up we saute on each side in the pot. It will brown a bit and after it browns, take it out and put on the side. You can use a plate on the side but maybe you like just using your countertop. To each their own I guess.
Add the rest of your ingredients, the broth, the capers, the garlic, the spices, the lemon juice and continue to saute for a minute or three. With a wooden spoon get the brown bits off the bottom of the pot.
Add the chicken back.
Cover that shit, put the pot on pressure for 10 minutes. You can let it naturally release when done or if you're anxious press the release button.
Maybe make some of our side dishes to go with and feed your family. Again, we all make our own choices but this is a good one, I think. I also had bangs once so it's really up to you.
