Linzer Tart Cookies (My Favorite!)

My favorite cookie is a linzer tart. It is NOT easy finding a gluten free linzer tart. In fact, growing up there was a bakery in town called Cardinalis and they had the best linzer tart cookies. They are real deal bakers. No gluten free, no coconut sugar, they do the real stuff. And it was THE BEST. How do you mimic that? First you fall into a mild depression at the thought of no linzer tarts in your future. Then you attempt your own. Well, I’m not upset about these at all. So much so that I’m sharing the recipe with you. I hope you enjoy as much as I do.

Ingredients

1 3/4 sticks of vegan butter

3/4 cup of coconut sugar

1 egg

1 tsp of vanilla

2 1/2 cups of GF flour

1 tsp of baking powder

1/8 tsp salt

Confectioners sugar (they have organic as well a beet sugar that can do that trick)
Directions
Preheat oven 350 degrees
In a bowl mix together vegan butter and coconut sugar.
Then add to the bowl, egg, vanilla flour, baking powder and salt. Whisk together.
Chill batter for 10 - 15 minutes.
After it’s been chilled, place on parchment paper, (maybe add a bit more flour as the dough gets very soft fast) Place another piece of parchment on top and flatten out with a roller.
Using your desired cookie cutters cut the batter into solid circle cookies Then use a smaller cutter, one in a shape…perhaps a heart, and cut into the middle of half your circles.
Bake for 12 minutes.
Let cool completely.
Once cooled sift the powdered sugar on only the circles that have the shape cut outs.
On the whole circles, spread the jam generously.
Place the powdered cut out circles on top of the jammed circles and voila…you’re a pastry chef!
