Marinated Peppers

Ok, stole another recipe from my mom. This is a go to in our house growing up. You can make this with any veggies but she always made it with bell peppers and I always ate them. Its a marinade and it tastes good. Not sure what else you need to know. You can use it for grilling. You can use it to marinate chicken. You can use it just to do these peppers. It really is up to you. I know you will like it and if you don’t, I’ll tell my mom and see how she feels about that.
Ingredients

2 red bell peppers, sliced

2 yellow peppers sliced

2 orange peppers, sliced

8 - 10 mushrooms

Marinade ingredients:

2 tablespoons of olive oil

6 garlic cloves

1/2 tsp of ginger, minced

1/2 tsp crushed red pepper

1 tablespoon of hot sauce

2 tablespoons of rice vinegar
-
2 tablespoons of vegetable broth

2 tablespoons of tamari
Directions
Put all the ingredients in a bowl and coat the peppers.
Pour into plastic bag and put in fridge.
You can let marinated for 30 minutes or over night. The longer the better.
You can either skewer your veggies (make sure the skewers were soaked in water) Skewered is best for the grill or a grill pan. You won’t be disappointed. OR...
You can bake in oven. I preheat the oven around 400 degrees
Put peppers and mushrooms on a sheet tray and bake for 10 minutes.
Take them out, flip them and bake for another 10.
I like when they get a little black on the edges but up to you.
