Ok so this is a great recipe to wow your friends. It’s fresh, it's pretty, it's like the easiest thing you can make and it’s healthy. Healthier than mashed potatoes, healthier than french fries. Great addition to a Summer meal. Or a Fall, Spring or Winter meal, let’s be real it’s good stuff. Let’s just get to it….

Ingredients

1lb of frozen peas

1 cup of onion, diced

8 garlic cloves, minced

1/2 cup of water

1 TBSP of olive oil

lemon zest
-
salt to taste
Directions
In a pan over medium heat, saute in olive oil, garlic and onions
Add peas and saute for about 2 minutes.
Reduce heat and add lemon zest and water.
Cover and bring to a medium heat, cook for 3 more minutes.
Uncover and continue to cool until the water has evaporated (Kind of feels like the hokey pokey, put your left arm in, take your left arm...)
Add everything to a separate bowl and mash until desired consistency
