Mint Chip Ice Cream
6 cups of ice cream
This recipe is for those who have ice cream makers at home. Our chef brought one to the kitchen and how could you not play around with what we already have. Chocolate chips…and…mint!! I’m just gonna assume everyone loves a mint ice cream, right? Well this one has a coconut milk base so that its not only gluten free but it’s dairy free my favorite kind of recipe :)
2 1/2 cups of sweetened coconut milk
1 cup condensed coconut milk
8 egg yolks (no whites)
1/2 cup coconut sugar
2 tablespoons of mint extract
1 1/2 cups of ENJOY LIFE mini chocolate chips (you can use any brand but these are allergen friendly
Gently heat coconut milk and condensed coconut milk.
In a separate bowl whisk together yolks and sugar.
Slowly stream milk mix into eggs to temper. Let cool.
Whisk in mint extract.
Put into ice cream maker and spin for one hour.
Add chocolate chips.
You can eat as is but I recommend throwing in the freezer for a bit.
