Guys,
I'm proud of this one. I had a craving for carrot cake and so I decided I was going to attempt to make one. Well I did! It's vegan and it's pretty darn good. I think the most difficult part of the recipe is grating the carrots, everything else is easy and exciting because in a short while you have cake! Even the frosting is homemade and just for you, I kept working on this to perfect it so definitely give it a go and keep us posted on how it comes out! Tag us, email us...all the things!

Ingredients

Cake:
-
1 cup coconut milk
-
1 table apple cider vinegar

4 1/2 cups of flour

2 cups of coconut sugar

4 tsp of baking powder

2 tsp of baking soda

1 table cinnamon
-
1 tsp of nutmeg
-
2 tsp salt
-
2 1/2 cups grated carrots (2 larger carrots)

2 tsp of vanilla
-
1 cup vegetable oil
-
Frosting:
-
1 cup vegan butter (2 sticks softened not melted)

4 cups confectioners sugar
-
1 table of vanilla
-
1 tsp of apple cider vinegar
-
3 table coconut milk
-
a pinch of salt
Directions
Cake:
preheat oven 350 degrees
Spray your 9 inch cake pans with coconut spray or whatever you have on hand as a cooking spray
Combine milk and ACV and set aside
Combine, flour, sugar, powder, soda, cinnamon, nutmeg and salt
Add carrots with hand mixer on low speed, add vanilla, oil and then coconut milk mixture. Mix until smooth. It gets smooth but it also gets thick. Thicker than a normal cake batter so don't get discouraged.
Divide batter into two pans. I normally press on cake to flatten in pans.
Bake for 25 minutes
Toothpick to make sure it’s cooked all the way
Let cakes cool completely (cut tops to even out if necessary)
Frosting
Whip butter until fluffy with hand mixer
Slowly add the sugar, keep beating until fluffy
Add vanilla, vinegar, coconut milk, salt —still looking for fluffy here.
Frost cake. I put one cake on a cake stand. Frost the top. Put the other cake on top and I do one layer of frosting. Put it in fridge and then take it out again in 15 minutes and do another coating.
