I have nothing to say. Just make them. Share them. Eat them. Maybe put them out for Santa and his reindeer. These are perfect and I only say that because I made them three times to make sure I had the recipe down pact. I tested the amounts of mint, the amounts of chocolate. I got this down to what I think is our best Christmas cookie. Happy Holidays and enjoy!

Ingredients

1 cup of coconut sugar

3/4 cup GF flour

1 stick of vegan butter

1/2 cup of dark chocolate morsels

1/4 cup chocolate chunks

1 tbsp of chia seeds

3 tbsp of hot water

3 tbsp of sweet potato puree

1/4 cup cocoa powder

1/2 tsp of salt

1/2 tsp of baking soda

1/4 tsp of mint
-
crushed candy cane for garnish
Directions
Preheat oven to 350 degrees.
Mix chia seeds with hot water and set aside. Make sure it forms like a gel like consistency.
In a large bowl, mix butter and sugar together until combined.
Add chia seed mixture, sweet potato puree, mint.
Then add dry ingredients, flour, cocoa powder, salt, baking soda.
Fold in chocolate morsels and chunks.
Scoop cookies onto sheet tray and bake for 12 minutes.
After taking out of oven and cookies are cooling, sprinkle crushed candy cane on top.
