Out of all the breads out there, this was never something I craved or wanted. Sounded weird to me to be honest. But HOLY SHIT, is it good. It's kind of like people wanting to go to Runyon Canyon. It's such a treat they would say, to be able to hike in nature. Come, you'll have a great time. Why? Hiking with snakes and mountain lions. No thanks! But...then I went and I enjoyed myself and now I go a lot. I guess there's a lesson there but I really would only like to apply it to Zucchini Bread because you will never get me to go camping. Mark my words! I'm not into cuddling with
creatures and/or tent sleeping. I'm almost 95 percent sure I would not enjoy myself. Zucchini bread on the other hand so yummy. Such a great dessert and it has vegetables in it. How bad can that be??
So like most of the recipes we are putting up here, super easy. Just a few ingredients and it's one stop shop to eating. That makes no sense but in my head it sounded perfect.

Ingredients

Dry:

3 cups of Gluten Free flour

1 tsp of salt

1 tsp of baking soda

1 table of cinnamon

Wet:
-
3 eggs
-
1 cup of coconut oil (if you don't have you can actually use vegan butter like we do, earth balance has a great variety)

2 1/4 cup of coconut sugar

3 tsp of vanilla

2 cups of Zucchini - grated and drained (Zucchini contains so much moisture so I have two tricks - one you can either take a few paper towels and squeeze it to drain, or you can place it in a strainer and sprinkle some salt on it which will help get rid of the moisture, I prefer the paper towel. Less time)
Directions
Preheat oven to 350 degrees.
We use an 8x4 bread pan that you're going to want to spray with coconut oil or rub with vegan butter so the bread pops out easy.
Mix your dry ingredients (flour, salt, baking soda, cinnamon).
Mix but really beat your wet ingredients (eggs, oil, vanilla, sugar).
Combine the bowls and then add in that drained zucchini.
Pour into your baking pan.
Bake 40 -60 minutes (my oven takes 60 minutes which I feel is ridiculous because it starts to smell so good and I just want it to be ready but I guess patience is another lesson to be learned here).
SLICE AND DON'T SHARE. Or do. Whatever floats your boat.
