It's FALL!! Let's eat Fall things!! Acorn squash is the best and here's a super simple recipe that is so sweet and savory you will wish it wasn't such a seasonal squash. As Carmel would say, SQUASH your hunger with this delicious Fall side dish.

Ingredients
1 medium sized acorn squash
2 tsp fresh thyme, chopped
1 tsp parsley, chopped
2 tsp salt
1 tsp black pepper
3 tablespoons of olive oil
3 tablespoons maple syrup
Directions
Preheat oven to 350 degrees.
In a bowl, add all the ingredients above minus the squash. Whisk together.
Cut the acorn squash in half and scoop out the seeds.
Slice the squash into 1/2 inch piece and then add to the bowl with the other ingredients.
Lay the coated squash in a single layer on a baking sheet.
Bake in the oven for about 40 -50 minutes or until squash itself is tender.
