Ok. So I tried this on a whim, wasn't sure how I was going to feel about it but it is by far one of my favorite desserts now. I highly recommend you try this at home. It is SO easy and such a great dessert to whip up. I like things that are simple and I like things you can eat with ice cream. I personally eat coconut ice cream but same thing... Do me a favor and try this the next time you have extra berries in your fridge.
Also do you have a cast iron skillet? It makes it look soo much cooler than a baking dish but either will work!!

Ingredients

2lbs of mixed berries (I use strawberries, chopped, raspberries and blueberries)

1/3 cup of maple syrup (I use organic)

2 tablespoons of arrowroot flour

2 tablespoons of lemon juice

1 cup of gluten free oats

1/2 cup of gluten free flour

1/3 cup of coconut sugar
-
1/4 tsp of salt
-
4 tablespoons of vegan butter
-
**vanilla coconut ice cream (or regular if you can eat it) for serving.

Directions
Preheat your oven to 350
Rinse your berries and remove any stems they may or may not have.
In a bowl mix berries with maple syrup, arrowroot and lemon juice. Set aside.
In a separate bowl mix together the oats, gluten free flour, sugar and salt. Then mix the butter in. Mix thoroughly.
Place the berries in your baking dish or skillet. On top, dollop the oat mixture over the filling. I use my fingers so it is evenly distributed.
Bake for 40 -50 minutes until you see the berries kind of bubbling. Take out of oven, let sit for a few minutes. Serve with your ice cream.
