


Balsamic Chicken

Ok so this is super easy and I recommend trying.  I'm just gonna jump right in because who wants to hear me babble on about how easy it is to make and how I was so excited that I had enough ingredients to make something so yummy when in fact, I hadn't gone grocery shopping in quite some time.  So yes, this was a part lazy dish but also a part wow, this is yummy dish.

                  Ingredients
- 
                1 tablespoon of oil 
- 
                1lb of chicken breast (about 2 chicken breasts pounded thin) 
- 
                1/2 stick of vegan butter (1/4 cup butter) 
- 
                2 shallots, diced 
- 
                1/2 pint of tomatoes, halved 
- 
                1/2 cup of red wine 
- 
                3 tablespoons of vinegar 
Directions
- Preheat oven to 350 degrees 
- In a saute pan (I used Chrissy Teigen's 5 qt saute pan which I love by the way) over medium heat, add butter and oil 
- Once the butter is melted and pan hot, add chicken and cook on each side for about a minute. You want to brown each side of the chicken breasts. When brown, take out of pan and set aside. 
- Add shallots and garlic and saute in leftover butter/oil until onions are a bit translucent. About 1 -2 minutes. 
- Add tomatoes and stir for another minute. 
- Add balsamic and red wine and turn heat up until it bubbles and then reduce to a simmer for about 10 minutes. 
- Put the chicken back in the pan, coat it with the sauce and then pop in oven for 10 minutes. 
- Add salt and pepper to taste and then YUM!!
