Ok so this is super easy and I recommend trying. I'm just gonna jump right in because who wants to hear me babble on about how easy it is to make and how I was so excited that I had enough ingredients to make something so yummy when in fact, I hadn't gone grocery shopping in quite some time. So yes, this was a part lazy dish but also a part wow, this is yummy dish.

1 tablespoon of oil

1lb of chicken breast (about 2 chicken breasts pounded thin)

1/2 stick of vegan butter (1/4 cup butter)

2 shallots, diced

1/2 pint of tomatoes, halved

1/2 cup of red wine

3 tablespoons of vinegar
Directions
Preheat oven to 350 degrees
In a saute pan (I used Chrissy Teigen's 5 qt saute pan which I love by the way) over medium heat, add butter and oil
Once the butter is melted and pan hot, add chicken and cook on each side for about a minute. You want to brown each side of the chicken breasts. When brown, take out of pan and set aside.
Add shallots and garlic and saute in leftover butter/oil until onions are a bit translucent. About 1 -2 minutes.
Add tomatoes and stir for another minute.
Add balsamic and red wine and turn heat up until it bubbles and then reduce to a simmer for about 10 minutes.
Put the chicken back in the pan, coat it with the sauce and then pop in oven for 10 minutes.
Add salt and pepper to taste and then YUM!!
