I'm not a big fan of fruit in dessert but I'm trying to broaden my horizons. Grow. Be a better and bigger person than the no fruit in dessert, closed off human that I was/am, you know what I mean. I hope.
So...low and behold, simple ingredients. Had everything at home except for powdered sugar which I borrowed from my neighbor. She dropped it off mid hallway in full mask and gloves of course.
Moral of this story guys, I'm a new person. I now like fruit in dessert. Growth.

1 cup of Gluten Free flour

1 cup of oat flour

1 3/4 cup of coconut sugar

1 1/2 tsp of salt

1/2 tsp of baking soda

1/2 tsp of baking powder

1 tablespoon of orange zest

1 cup of extra virgin olive oil

1 1/4 cup of oat milk
-
3 eggs
-
1/2 cup orange juice (from oranges that you zested unless you keep orange juice in the house then by all means)

Oranges and rosemary plus that borrowed powdered sugar for garnish cause I'm...fancy.
Directions
Preheat oven to 350 degrees
Dry ingredients in one bowl (I feel like this is standard in baking. As I bake more, I've made the decision that this is standard, I may be wrong)
With a mixer on medium, whip the eggs and stream in liquids: oil, milk, orange juice
Switch setting on low and whip in dry ingredients.
Pour in cake pan, mine's a 9 inch round
Put in oven for 30 minutes
Rotate pan and continue to cook for another 30
Disperse to neighbors if you are in a pandemic.
