BBQ Chicken Salad

Woo Sauce is my favorite BBQ sauce. There I said it. I love it so much and I really want you to try the sauce and this recipe. I know it’s just a salad but between the BBQ sauce, the cilantro jalapeño dressing, you are in for a treat.

Ingredients

1 cup of rotisserie chicken, shredded. (I just buy from the grocery store, let’s keep it easy)

3 -4 tablespoons of BBQ sauce, I use Woo Sauce, you should too.

1/4 cup black beans, drained and rinsed

1/4 cup corn, drained and rinsed

1/4 cup cherry tomatoes, halved
-
1/4 cup red onions, diced
-
3 - 4 oz lettuce. I did a mix of kale and gem lettuce from the farmers market

1/2 an avocado sliced or diced
-
Optional - baked tortilla strips

CILANTRO JALAPEÑO DRESSING:
-
1/2 cup veganaise mayo
-
1/4 cup cilantro, diced
-
2 jalapeños, diced
-
2 tablespoons of oat milk
-
1/4 tsp garlic powder
-
1/4 tsp onion powder
-
1/4 tsp salt
-
1/4 tsp dried dill
Directions
Add your BBQ sauce to your shredded chicken and just mix until the chicken is coated.
Add all your salad ingredients to a bowl. Throw it all in or make it pretty. I’m game for whatever.
To make tortilla strips, here’s a secret. Preheat your oven to 350, cut a corn tortilla into strips. Rub it with some olive oil and bake for 10 minutes. Take out of oven, flip and if you have tajin, sprinkle some on…it’s SOO GOOD. Bake for another 10 minutes until golden brown.
CILANTRO JALAPEÑO DRESSING:
Add all your ingredients together and mix. Pour onto your salad and enjoy!
