These are my all time favorites!! I grew up on guava pastelitos. This treats remind me of my mom because whenever we went down to Miami to visit family, we had to pick up tons of these sweet treats. With that said, they don’t make gluten free pastelitos. I feel like I would get side eye for asking. But I found a gluten free pastry dough and this was the first thing I thought of to make!! HEAVEN!! This is super easy to make but make it, you will love them!Author:
1 package of Schar’s gluten free puff pastry dough, defrosted
1 package of guava paste
1 egg white, whisked thoroughly
Preheat your oven to 400 degrees
Roll out your dough on a sheet tray
Cut your paste into slices (about 1/4 thick) and spread out onto your dough.
Top the dough and paste with the second sheet of dough.
Cut your pastries into squares. You do not have to pull apart.
Brush your egg white on top of the pastry dough, this will give it a golden brown color.
Bake in oven for 20 - 25 minutes.
Let cool. Pull apart and serve! Enjoy!
