Ok so here’s the deal, when I was really in the thick of it with Lyme, I lost a lot of weight. So much so, that when my mom flew out to LA to take care of me for a few weeks, she cried when she saw first saw me. She immediately went to the grocery store and made me bolognese. I said, “Ma, that looks like way too much food.” Now back then, I wasn’t eating much, so a meat sauce that generally uses flour, cream and grated parmesan wasn’t going to serve me well. She came up with a recipe minus these things and it was delicious. She froze it for me in little 16oz portions so that I can grab and go. I still make this sauce and whenever I crave it, I take it out of the freezer, boil a handful of lentil pasta and just like that, I have the best meal. So here ya go:

Ingredients

2 tbsp of olive oil

2 lbs of ground turkey or ground chicken. (I prefer chicken)

2 onions, diced

2 carrots, sliced

6 garlic cloves, minced

1 tsp of oregano
-
1/2 tsp of red pepper flakes

2 tsp of salt

2 tsp of pepper

1 cup of organic dry white whine (Trader Joes has a good one, Green Fin)

28oz can of diced tomatoes

1 cup of tomato sauce

3/4 cup of organic chicken broth

1 cup of roasted red pepper (I roast my own over the stove but have also opted not to roast sometimes because I didn't have time)

1 cup of milk substitute, I use SO DELICIOUS unsweetened coconut milk

1/3 cup of parsley for garnish

Gluten Free Pasta
Directions
Heat olive oil in saucepan over medium heat. Add meat and brown
Add onions, carrots, cook and stir frequently for 3 -5 minutes
Add garlic, oregano, crushed red pepper, cook for 1 -2 minutes
Add wine and increase heat to high and cook for about 5 minutes until wine evaporates
Add your tomatoes, sauce and roasted peppers, broth
Reduce heat to low and cover
Let cook for 30 minutes, stirring occasionally
Add coconut milk and cook for another 2- 3 minutes
Meanwhile, boil that pasta. Once you have some cooked pasta, add it all together, throw some parsley on it and call it a night!
