Ingredients

1lb of potatoes, diced into pieces, medium

1/2 cup yellow onion, thick pieces

1 cup red pepper, thicker pieces as well

2 garlic cloves

2 -3 tablespoons olive oil

1/2 tsp smoked paprika

1 tsp of salt (1/2 for potatoes, 1/2 for onions and pepper)

1/2 tsp of pepper (1/4 for potatoes, 1/4 for onions and pepper)

1/4 tsp red chili flakes
Directions
Preheat oven to 425.
On a sheet tray, toss potatoes with oil, paprika, 1/2 tsp salt, 1/4 tsp pepper, chili flakes.
Bake in oven for 30 minutes.
Meanwhile, over medium heat, heat some olive oil.
Add your onions and pepper and saute for about 5 - 8 minutes.
Once potatoes are done add to saucepan with peppers and onions and mix together.
Voila!
