This is the easiest meal to make, so fresh and easily found ingredients at your local farmers market. It’s my go to for a Sunday dinner. I market, I sauce, I have a day and then I come home and eat my pasta. It’s good for jarring and having for the week as well. Don’t underestimate a simple recipe!

Ingredients

1lb pasta (Barilla has good GF spaghetti)

2lbs tomato halved (on vine or roma)

4 -5 cloves Garlic

1 cup of shallots

1 cup of basil

4 tablespoons oil

1/3 cup parm (follow your heart vegan)

1/4 tsp crushed pepper

1/2 tsp salt

¼ tsp of pepper
Directions
Preheat oven to 400 degrees
Place tomato’s halved on a sheet tray and season with salt and pepper, drizzle with olive oil, flip then drizzle more olive oil throw in oven for 25 -30 minutes.
Meanwhile boil pasta.
In a large sauce pan heat up olive oil (medium heat) and add shallots and garlic until soft, 1 -2 minutes.
Once tomatoes are done in oven pour into the saucepan with shallot mixture. 4 - 5 minutes on low - medium heat.
Pour tomatoes, and shallot mixture and basil into blender, pulse.
Pour sauce back into sauce pan over low heat, season with salt, pepper and crushed red pepper and cheese, stir for a bit.
Then add boiled pasta into sauce pan and coat pasta. Take right out, do not drain.
Done and Done.
