It’s really what you prefer, the cob or off the cob. I’m a sucker for both. I'm assuming you took a look at the Elote recipe as well. Super similar, it's really your choice.
1 lb of frozen corn
1 tablespoon Vegan butter
1/2 cup Vegan Mayo
1/2 cups Cotija cheese crumbled (if you eat dairy but if not, vegan parm works too)
1 tsp salt
1 tsp tajin
1/2 tsp pepper
Preheat your oven to 350
Mix your frozen corn with your butter and pop in the oven for 10 minutes until corn is cooked through.
OR over medium heat add the butter/corn mixture to a saucepan and cook for 5 -7 minutes until cooked through.
(Optional - Again for a nice little char, broil the corn for the last minute. NOT MANDATORY.)
Place corn in bowl and mix in the rest of your ingredients. And that’s it.
