We used this on steak because as you know ever since discovering Carmel can make the best steak, we keep making her make us lunch. But it goes with anything. On roasted cauliflower, on potatoes (of course), shrimp, alone. There I said it, I can eat chimichurri alone. Judge me. But try the recipe first and then judge me or eat it alone yourself.

Ingredients

1 cup of parsley

1/2 cup of cilantro

1 small shallot, diced

1 cup of olive oil

1/4 cup of red wine vinegar

1 tablespoon of minced garlic

2 tsp of oregano
-
1/2 tsp of red pepper flakes

Salt and pepper to taste
Directions
Combine shallot, chili flakes, garlic, vinegar and about 1 tsp of salt in a medium bowl.
Let sit for about 10 minutes.
Stir in cilantro, parsley and oregano.
Whisk in oil.
Taste and add salt and pepper if needed.
Then, I say douse it on everything!
