This is a great recipe for Fall and Winter. Probably a good recipe for Spring and Summer too. But anything that has cinnamon I just generally make the assumption it should go into the Fall category. Like Pumpkins. Ok sorry, off topic. Anyway, easy recipe for dinner.

Ingredients

4 large bell peppers (red, orange or yellow), cut in half

4 tbsp water

2 tbsp of olive oil

1lb of ground turkey or chicken. I like chicken better because it doesn't dry out as much as turkey

1/2 cup of onions, diced

3 cloves of garlic, minced

4 tsp of cumin

4 tsp of coriander

1 tsp of salt

1 tsp of cinnamon

1/2 tsp of cayenne

1 cup of dried brown rice, cooked (real easy, 1 cup of rice in a pot with 2 cups of water, bring to a boil, the cover and simmer for 40 minutes...dried rice cooked!)

1 1/2 cup of crimini mushrooms, diced finely
Directions
Preheat oven to 400 degrees
Place halved (deseeded) peppers on baking dish and microwave covered for about 4 minutes with 2 tablespoons of water. DRAIN
In a skillet, heat oil. Saute meat until brown and then add the rest of the ingredients. Remove from heat.
Arrange pepper halves on a baking sheet or dish, fill with rice and turkey mixture. Bake covered for 15 minutes. Then uncover and bake for 8 more minutes.
Serve
