Ahh, it's been a few days without a potato recipe. So thank goodness here you go. Again, another great side dish for steak which I keep making Carmel make. Also as I've previously mentioned, I love anything potato. French fries, Scalloped potatoes, smushed potato, mashed (very different than smushed) and now we have the fingerling...

Ingredients

2lbs of fingerling potatoes

1 tablespoon of butter
-
2 tablespoons of olive oil

salt and pepper to taste
Directions
Place the potatoes into a pot of cold water and add 1 tablespoon of salt. Bring to a boil.
The potatoes are done when a fork can poke through the potato. #forktender
Drain the potatoes from the water and then slice the potatoes length wise, like a finger. #finglerling
Next, place a pan on the stove at medium heat and add the olive oil.
When the oil is hot place the potatoes, cut side down into the oil. When they turn golden brown and crispy they are done.
Add butter for creaminess and overall yumminess.
Sprinkle with salt and pepper. Just a side note, us home chefs tend to under salt...so be generous, why not?
