Chocolate Oreo Mint Cookies

Our new favorite cookie. When they came out with GF Mint Oreos I wanted to incorporate them into everything. If you haven't stopped in the kitchen to try, you must give it a go yourself! So good.
Ingredients

2 ⅓ cup Gluten Free Flour (we use bobs red mill 1 to 1), sifted

¾ cup Cocoa Powder, sifted

1 cup vegan butte (2 sticks), room temp

1 cup granulated sugar

1 cup of coconut sugar

1 cup Gluten Free Oreo Mint Cookies (Chopped)

2 eggs

¾ cup Enjoy Life mini white chocolate chips

¾ cup Enjoy Life mini chocolate chips

2 tsp vanilla
-
1 tsp baking soda
-
½ tsp salt
Directions
Preheat your oven to 350 degrees
First mix your butter and sugars (coconut and granulated) until bubbles start to form. (I use a stand mixer but a hand mixer works as well)
Add your eggs and vanilla, 1 -2 minutes
Start adding your dry ingredients, small to large. So, baking soda, salt and then your sifted flour and cocoa powder. 1 -2 minutes with hand or stand mixer.
With a spatula, add your Oreos and chips and fold into batter.
Scoop on to sheet tray (We line ours with parchment paper, but spraying with a little coconut oil works too) and then pop in the oven for 10 -12 minutes.
