I love a baked donut. I also love a fried donut, I’m not a monster. But baking them seems healthier so why not make them for Christmas. Here’s a great donut recipe you can do at home and have during the holidays but really all year round.

Ingredients

1/4 cup butter

1/4 cup canola oil

1/2 & 1/3 coconut sugar

2 eggs

1 1/2 tsp of vanilla

2 2/3 cups flour

2 tsp of cinnamon

1 1/2 tsp of baking powder

3/4 tsp nutmeg

3/4 tsp of salt
-
1/4 tsp baking soda
-
1 cup of coconut milk
Directions
Preheat oven to 425 degrees
Spray donut pans (I bought mine on amazon)
Cream together the butter, oil and sugar until smooth.
Add eggs and vanilla and keep mixing until smooth.
In a small bowl add flour, cinnamon, salt, nutmeg, baking powder, baking soda.
Alternate adding flour mixture and milk to your butter mixture. Mix on low.
Put batter in a ziplock back (I bought those fancy piping bags but it didn’t work out for me). Get all the batter into the corner of the bag and then cut off the tip. Squeeze batter evenly into donut pan.
Bake for 7 minutes.
I actually took them out and let them cool on a baking rack.
**If doubling recipe, it may need more liquid.
FOR THE GLAZE:
1 cup of powdered sugar
2 TBSP of oat milk
1 tsp of vanilla
WHISK TOGETHER
When the donuts are cool, dip them into the glaze and then place back on cooling rack. I like to double dip them.
And then add sprinkles of your choice. For Christmas, I stuck with red and green. But go crazy!!
