Cast Iron Birthday Cake Cookie
This is really such a fun way to change it up in the cookie department. Especially if you have a small skillet and some sprinkles. Add a bit of ice cream to the mix, you definitely will not disappoint.
1 cup & 2 Tablespoons of gluten free flour
1/2 cup of vegan butter (or regular butter), softened
1/2 & 1/4 cup of coconut sugar
1/4 cup of sprinkles
1/2 cup of chocolate chips (I use enjoy life)
1/2 tsp of salt
1/2 tsp of baking soda
1/2 tsp of vanilla
Preheat your oven to 350 degrees
Cream the sugar and butter together.
Add your egg and vanilla and keep mixing until bubbles form.
Add your dry ingredients. I start with the baking soda, salt and then add the flour.
Finally, fold in your sprinkles and chocolate chips.
Place into your cast iron skillet, I used an 8 inch. If you use a bigger one you may want to double the recipe.
Bake for 25 - 30 minutes.
