Here’s a great sugar cookie recipe but make it fun!!
1 ½ sticks of vegan butter
½ cup coconut sugar
¼ cup of granulated sugar
1 large egg
½ tsp vanilla
2 cups gluten free flour
½ tsp baking powder
½ tsp salt
1/8 tsp baking soda
½ tsp red gel food coloring
2 tsp green gel food coloring
Preheat oven to 375 degrees
Mix butter and sugars together until little bubbles form.
Add in egg and vanilla.
Now add your dry ingredients, flour, baking soda, baking powder, salt. Mix well and all together.
Divide dough in half. Color one half with the green coloring and the other with the red. To really incorporate color, use hands and mix well
Roll out each portion. We used a half sheet tray, lined it with parchment paper and spread out dough. Refrigerate both for 15 minutes.
Once refrigerated, remove parchment paper and place one dough on top of the other and roll as tightly as possible. Wrap in plastic. Refrigerate again 30 minutes - an hour.
Unwrap dough and cut slices. We cut around about ¼ inch slices.
Put cookies on a sheet tray and bake for 7 - 9 minutes.
Let cool. Now eat!
