Flourless Chocolate Cake
Just gonna leave you with a few words:
Rich. Decadent. Chocolate.
2 sticks of vegan butter
8 oz of bittersweet chocolate (we used Enjoy life morsels)
1 1/4 cup coconut sugar
1 tsp of vanilla
1 cup cocoa powder
Powdered sugar for garnish. You can garnish with coco whip, strawberries, raspberries…anything you think would go great with this chocolate amazingness
Preheat oven to 350
I used a 9inch cake pan. Grease it with coconut spray if you can. If not, vegan butter works great too.
In a saucepan, melt together the butter and morsels over medium low heat.
Stir until mixed well and make sure you don’t overcook.
Remove from heat and let cool for a bit.
Add the sugar and stir.
Add in the eggs, one by one and whisk.
The the vanilla. Mix.
Then add cocoa. (I sifted the cocoa because it sometimes get’s lumpy, you don’t have to). Mix, mix, mix. Make sure it’s smooth.
Pour into your greased pan and bake for 25 - 30 minutes. Make sure the center is cooked through, toothpick test it!
Once cooled, dust with your powdered sugar or eat with your cool whip.
