Not in the mood for lettuce? Want something refreshing? Here’s my best friend’s salad. She came into town and wanted to cook me something special. Ironically, there was no cooking involved just some small dicing. Hope you love it as much as we do!

Ingredients

½ cup cherry tomatoes, halved

½ cup cucumbers, diced

½ cup red or orange bell peppers

1 can garbanzo beans, rinsed and drained

½ cup Kalamata Olives, sliced

¼ cup shallots, diced
-
¼ cup vegan feta
-
1 jalapeño
-
Dressing:
-
¼ cup olive oil
-
3 tablespoons red wine vinegar
-
½ tsp oregano
-
¼ tsp Dijon mustard
-
¼ tsp salt
-
1/8 tsp black pepper
Directions
Mix all the salad ingredients in a bowl and toss.
Mix dressing ingredients in a separate bowl and whisk together.
Pour dressing over salad at your leisure and mix together. Enjoy!
