GF Club Sandwhich

One of the things I really do miss is just going into a deli and ordering a sandwich. I grew up in New York and going to my deli (Woodbury Country Deli…the best!) was an everyday thing.
Never really a line, just people bunched together always shouting things like, “egg white, salt and pepper. YES KETCHUP.” Or, “club on wheat with extra bacon.” “Everything Bagel scooped out with tuna.” And then they wouldn’t hear you and you have to scream “TUNA” really loud and it’s kind of embarrassing until it becomes your usual and you don’t have to say anything just give a look.
One of my looks was for a club. A simple club with a pickle and yummy dressing. The thing is, I’m Gluten Free. No more bagels and sandwiches for a long time. The deli probably wouldn’t even know me if I walked in and then if I gave the look everyone would stare at me awkwardly. A thing of true nightmares.
Point is until recently it’s been hard to find a good Gluten Free bread period. Cocobakes makes an amazing Sourdough. And I had all the fixings. But to make this sandwich extra special, Jeremy pickled our own pickles and instead of mayo we went back to Carmel’s Date Dressing and made the consistency a bit thicker and used it for our sandwich.
So here’s a modified club sandwich. ENJOY!

Ingredients

Gluten free sourdough bread

Sliced deli Turkey

Turkey Bacon
-
Pickles (recipe here)

Date Dressing (recipe here)

Your favorite lettuce (we used Butter)

Thick slices of Tomato
Directions
Prepare bacon to package instructions.
Make date dressing according to our recipe here.
Slice bread, tomatoes, and pickles. If you want to make your own pickles, read this recipe here.
Slather the Date Dressing on each side of the bread, and layer on your ingredients!
