GF Orzo with Parmesan and Peas

Another side dish. Another day. Sometimes we need to change up our sides. As you know, I always opt for something potato but I found gluten free orzo and decided to run with it. Orzo is great because you can cook it in broth and it creates such great flavors. Check out this recipe, I’m sure you will love it!

Ingredients

1 1/2 cup of gluten free orzo (Amazon was where I was able to find this)

3 cups of vegetable broth

1 1/2 frozen peas

1 cup of yellow onion, diced

1 container of vegan parmesan cheese (follow your heart or whole foods brand are good choices)

2 TBSP of vegan butter

2 TBSP of lemon juice. (the citrus makes the dish lighter and not as heavy as you would think)

1 TBSP of garlic, minced

1/2 tsp of salt

1/2 tsp of Italian Seasoning

1/4 tsp of pepper
Directions
In a saucepan over medium heat, melt your butter.
Add your onions and cook for 1 -2 minutes and then add your garlic, cook for another minute.
Add your uncooked orzo, broth, seasoning (salt, pepper, Italian seasoning) and bring to a boil.
Once boiling, cover and reduce to low heat. Let it simmer for about 10 minutes or until the liquid is absorbed.
If the pasta needs time add a bit more liquid until it is thoroughly cooked to your liking.
Over low heat, add your peas, parm and lemon juice. Stir until cheese is melted. Serve and Enjoy!
