Vegan Nacho Cheese Dip

A lot of Vegan restaurants serve nacho cheese now, which is AMAZING. But for someone like me who can’t eat nuts, it’s a bit of a problem since most Vegan cheeses are made with cashews. Here’s our friends’ Vegan nacho cheese creation. Enjoy it with chips, our habanero salsa, or whatever you like.

2 cups of oat or coconut milk (oat has a thicker consistency so I'd say it's a better option)

1 cup of Vegan Parmesan (follow your heart is a great brand but now Whole Foods makes a plant based parm as well)

1/2 cup vegan butter

1/2 cup of flour

4 oz jar of diced pimentos

4oz jar of green chiles

1/2 cup of nutrtional yeast

2 tsp of Gracefully Fed Taco Spice (you can make your own or buy in store but our's comes in pretty handy if I say so myself)

2 tsp of cumin

1 tsp of pepper

**1 Jalapeño - diced, for garnish - optional

**1/4 cup red bell pepper, diced small - optional for garnish
Directions
Over low heat boil the butter and the 2 cups of milk.
Add the parmesan until melted.
Then add the nutritional yeast, spices.
Finally you are going to whisk in the flour slowly to your desired thickness.
Once thick add in your chopped chiles, pimento.
Garnish with red bell pepper and jalapeños.
