Ok, this one has a lot of parts but it's really yummy! Have you ever had Le Bowl at Zinque on Melrose? I've been CRAVING their Le Bowl so I took a stab at it myself minus the dairy. Not sure this is what they do but it seemed close and I enjoyed it thoroughly. I'll rename ours to "The Bowl" as I still encourage you to try theirs.

Ingredients

2 breasts, 1lb

Season with the following: 1 tablespoon garlic powder1 tablespoon Italian Seasoning1 tablespoon paprika1 tablespoon of salt1/2 table of black pepper1/2 table of cayenne1/2 table of thyme1/2 table of onion powder

2 -3 Tomatoes, any kind - deseeded

a sprinkle of coconut sugar

a drizzle of olive oil

a drizzle of balsamic vinegar

Brown rice, 1/2 cup of frozen or if cooking I like to make a cup and save the rice for other recipes.

Avocado, 1/2 or full, depends on how hungry you are

The tomatoes you just roasted, diced

Handful of arugula

Shredded chicken, again depends on how hungry you are or who you are feeding :)

Directions
Instant Pot Chicken
Add 2 cups of chicken broth
Put a lid on it and pressure cook for 9 minutes.
When done, shred chicken. Any broth left over is really good to cook your rice in!!
Balsamic Tomatoes
Preheat oven to 250 degrees
On a lined baked sheet lay out your tomatoes and add ingredients on top
Pop in oven for 35 minutes
The Bowl
Put ingredients in the bowl.
Add your dressing.
Enjoy!
