Cake is great but why not make it refreshing. I mean maybe that’s not the word, let’s switch it out with amazing. I never thought I’d like a lemon cake, it’s not my go to order but I’m a changed woman with this recipe. It’s so light, refreshing and great way to start my day! Ingredients

Cake:

3 cups gluten free flour

2 cups sugar

2 tsp baking powder

2/3 tsp baking soda

1 tsp salt

4 eggs

2/3 cup vegetable oil

2 tablespoons white vinegar

2 tsp vanilla
-
1 cup of oat milk
-
1 tablespoon of lemon zest

Frosting:
-
1 cup powdered sugar
-
2 - 3 tablespoons fresh lemon juice
Directions
Cake:
Preheat oven 350 degrees
Mix eggs, oil, vinegar, vanilla, oat milk and sugar together.
Then add dry ingredients, powder, soda, salt, flour and zest.
Mix until batter forms bubbles
Pour into bundt cake pan (make sure you spray with coconut oil first) and bake for 55 minutes.
Let cool for about an hour.
Frosting:
Mix ingredients together
Once cake is cooled drizzle frosting on top.
