Every year during the holidays my dad would get apple cider from a place called Jericho's. Still to this day, it is hands down the best apple cider I have ever tasted. So when I was home visiting, we made this cake. Unfortunately Jericho’s does not ship nationwide so I use what we’ve got in LA, its still delightful. Easy one bowl recipe and good for the holidays! Hope you like it!
Ingredients

Cake:

1 1/2 sticks of vegan butter

1 1/3 cup of coconut sugar

2 tsp vanilla

3 large eggs

2 3/4s cup gluten free flour (we used bobs redmill 1 to 1)

2 tsp of baking powder

1/2 tsp baking soda

3/4 tsp of salt

2 tsp of cinnamon

1/4 tsp of ground ginger

1/4 tsp nutmeg

2/3 cup of apple sauce

1 cup of apple cider

Coating:
-
1/2 stick of vegan butter, melted
-
1/2 cup coconut sugar
-
2 tsp of cinnamon
-
1/4 tsp of salt
Directions
Preheat Oven 350 degrees
Soften your butter, for the cake. Don’t melt but make sure it’s soft enough to mix with sugar. Whisk or use a hand mixer to mix together.
Add the vanilla and then one egg at a time, keep whisking.
Add your cider and applesauce and mix together.
Then add the dry ingredients but small to large.
Add powder, soda, cinnamon, salt, nutmeg, ginger. Mix together.
Then add your flour.
Once all combined, pour into a greased bundt pan (when I say greased, I mean sprayed with coconut spray or greased with vegan butter.
Bake for 55 min to an hour. Until you can put a toothpick in the cake and it comes out clean.
Let it cool for 15 - 20 minutes and then flip over. We use a wire rack with a sheet tray underneath.
For the coating, mix together the cinnamon, sugar and salt.
Brush the melted butter all over your cooled but still warm cake.
Once covered, sprinkle the cinnamon/sugar/salt mixture.
