I'm not sure what it is about pizza but I'm not going to lie, I miss it soooo much. I'm a New Yorker, growing up pizza was dinner every Friday night. Who am I without pizza? I really can't answer that question. Devastating. So, we try to reinvent. It's summer, who doesn't want something fresh, easy and takes less than 10 minutes?
Well here's my take on a healthier version. Sure I'd love to say screw it, just take me to Frank's Pizza (my local childhood pizzeria) and get me a slice but for me, there are consequences and I have to remind myself that its one slice or two days of pain, inflammation, and couch sitting. So why not splurge on our Mediterranean Pizza instead?
When I splurge, I allow myself a bit of dairy. I use OUTER AISLE cauliflower crust as it cooks well compared to other crusts. Everything is super simple!

Ingredients

First make your Tahini free Hummus.
Ingredients are:
1 CAN OF GARBANZO BEANS (DRAINED)
1-2 CLOVES OF GARLIC
1-2 TABLESPOONS OF OLIVE OIL
1-2 TABLESPOONS OF LEMON JUICE
1/4 TEASPOON CUMIN
14 TEASPOON PAPRIKA
SALT TO TASTE
PUT ALL INGREDIENTS IN FOOD PROCESSOR AND BLEND. I LIKE MINE A BIT LEMONY SO I ADD LEMON JUICE UNTIL IT GETS A CREAMY CONSISTENCY.

Cauliflower crust (Refer to above picture, that's what I used and loved them)

Tahini free hummus (I'm allergic to sesame hence the Tahini free)

1 Cucumber
-
1/4 pint of tomatoes, halved
-
4-5 Kalamata Olives, sliced
-
A handful of arugula
-
Salt to taste
-
Dried Dill to taste.
Directions
Bake crust according to the package. :)
Spread hummus over the crust
Add arugula and rest of ingredients.
Add salt and dill to your liking.
