Pineapple Upside down Cake

Try this recipe. It is one of the fluffiest and most flavorful cakes we have made. Is it the most gorgeous cake I've ever seen, no but it really is soo delicious and yummy!Author:
1 can of pineapple rings
¾ cup of pineapple juice (use from the can of rings)
1 cup of coconut sugar
½ stick of vegan butter
1 box of organic instant vanilla pudding

OR instead of our cake recipe use a gluten free yellow cake mix. I know we are all in a rush so no judgment if this is easier.
If using yellow cake mix, make sure it’s gluten free and add the following:
¾ vegetable oil (omit if using our homemade cake recipe)
4 large eggs (omit if using our homemade cake recipe)
¼ tsp baking soda (omit if using our homemade cake recipe)
Preheat oven 350 degrees
Make our cake and mix with the instant vanilla pudding and pineapple juice and then set aside. OR
Mix together yellow cake mix, eggs, baking soda, vegetable oil and pineapple juice and set aside.
Regardless of which cake you decide to make you are going to heat butter over stove on low - medium heat until completely melted and then pull off stove.
Spray a 9x13 pan and line with parchment paper.
Pour butter over parchment paper and spread out.
Spread coconut sugar evenly over butter.
Add pineapple rings over sugar and butter mixtures.
Pour your cake batter on top evenly.
Put in oven for 50 -60 minutes.
Let cool before turning over.
Turn over and enjoy!
