Everyone loves a lemon bar. Citrusy, sugary, yummy and gluten and dairy free. Win, win, win! Hope you like as much as we do!
Ingredients

2 cups of gluten free flour, we use bobs red mill 1 to 1

1 cup of vegan butter, softened

½ cup granulated sugar

1 tsp vanilla

½ tsp salt

6 large eggs, room temp

2 cups granulated sugar

1 cup of lemon juice
-
½ tsp vanilla
-
½ cup gluten free flour

Directions
SHORT BREAD
Preheat oven to 350 degrees
Easy peezy, mix all ingredients together in a food processor.
In a greased 9x13 pan lined with parchmant paper add your short bread and pat down.
Bake in oven for 20 - 22 minutes
LEMON FILLING
Mix all ingredients together in a bowl.
Pour over baked short bread.
Put in oven for 25 - 30 minutes until there is NO JIGGLE.
Take out of oven and leave in room temp area for 1 hour.
Then put in fridge for 1 to 2 hours.
Cut in squares.
Powder with powdered sugar and serve!
