We make these in the kitchen every Fall but giving you the recipe so you can make them year round. Why not? Sometimes we crave Pumpkin Summer, right?

Ingredients

1 ¾ cup gluten free flour

2 large eggs

1 cup pumpkin puree

¾ coconut sugar

¼ cup sugar

¾ cup melted butter
-
1 tsp vanilla
-
2 tsp pumpkin spice
-
1 tsp baking soda
-
1 tsp baking powder
-
½ tsp salt
-
1 cup semi sweet chocolate chips (we use enjoy life minis)
Directions
Preheat oven to 425
Whisk together your eggs, sugars, pumpkin puree, butter and vanilla in a bowl.
Add in your dry ingredients, I start with the soda, powder, salt, pumpkin spice, I keep mixing and then I add the flour last.
Fold in your chocolate chips.
Line your muffin tin with liners or if you hate muffin liners just spray with coconut spray and fill the muffin tin to the top. They don’t rise a lot so you want to make sure they are filled generously.
Pop in the oven for 5 minutes at 425, then bring down the heat to 350 and cool for 15 minutes.
Then eat.
