The age old question, Mexican street corn on the cob or in a cup. You choose. I put both recipes up and you can let me know which one you like better.
4 ears of corn (shucked of course)
1 tablespoon Vegan butter
1 cup Vegan Mayo
1 - 2 cups Cotija cheese crumbled (if you eat dairy but if not, vegan parm works too)
1 tsp salt
1 tsp tajin
1/2 tsp pepper
Boil some water and add your butter.
Drop your ears in the water and let boil for about 5 minutes
Remove from water
(Optional - if you have a grill pan, I would just grill for a nice char, if not, no problem, still tastes great without the char.)
Brush corn with mayo.
Sprinkle your choice of cheese.
Sprinkle your spices
Squeeze fresh lime over corn and enjoy!
