It's a weird Christmas for us all. For me, it will be the first time in my life that I haven't traveled back to New York to be with my family. Our tradition starts with nochebuena, Christmas Eve. It consists of pork, rice and beans, maduros, yucca, mojo, lots and lots of sweets and pies baked by my mom. When I think of Christmas, I think of a mix of aromas. One of garlic being roasted or cooked and the other of Hello Dollies baking in the oven. I can't be with my family this year so I am carrying on the tradition here in LA. Although, I'm not making a pig! I decided to go with a Ropa Vieja recipe you can easily cook in your instant pot. Ropa Vieja is another classic Cuban meal that literally means 'old clothes." The story goes, there was a penniless man that once shredded and cooked his own clothes because he could not afford food for his family. The rumor is, you will love this dish once you try it. Over the next few weeks, I will share with you some of my favorite Cuban dishes. They are the best. And you don't have to just save them for Christmas :)

3 lbs of chuck roast - this may seem like a lot but it shrinks, trust me.

1 table oregano

2 tsp of salt

2 - 3 table olive oil

1 tsp of pepper

2 serrano peppers chopped

3 cloves garlic minced

1 cup of onion diced

1 red bell pepper thinly sliced

1 bay leaf
-
2 tsp of Cumin
-
2 tsp paprika
-
1 4oz can of tomato sauce
-
1/2 cup white wine
-
1/2 cup green olives sliced if possible

1 cup of water
-
lime juice to taste
Directions
Season Steak with oregano salt and pepper
Turn instant pot to saute. Add oil and then saute steak on each side for 7-8 minutes and remove and set aside
Add a bit more oil, once hot add onions, garlic, peppers, olives and bay leaf, sate for a few minutes
Then add wine and tomato sauce, stir frequently
Add water and the put in steak.
Flip the steak a few times to make sure sauce covers it all.
Set Instant Pot for 90 minutes, naturally release
Remove steak when instant pot depressurized and shred in separate bowl.
Put back in instant pot. Mix the ingredients together.
Taste and add salt and lime juice to your liking (serve over rice)
