Maduros (Fried Sweet Plantains)
I am going to be 100% honest, I do not make these like my grandmother. I think most of the time I don't buy my plantains ripe enough or I am too impatient so I cook them right away. Be patient!! It's worth it. The sweeter the better!
2 -3 ripe plantains (I mean black, not green...black!), cut into 1/2 inch thick slices
salt to taste
On medium to high heat, cook your oil
Pop your bananas in and cook on each side from 2 -3 minutes. A good tell is if you drop the banana in and it bubbles, your heat is your right.
Remove from oil and place on a plate that is covered with paper towel. It removes some of the excess oil this way.
Salt to taste.
