I don't know about you but it's that time of year when I want something fresh and clean. You know a change up from all the heavy stress eating. Or just heavy eating. I added these spring rolls because they are SUPER easy to make and a bit therapeutic when making because when you finally get a good roll...its so satisfying. To make and to eat! Anyway, try them out, it's fun easy and honestly, you can put whatever you want in them!

Ingredients

Rice Wrappers (Whole Foods carries them)

Any vegetable you desire, we used: avocado, red cabbage, mango, red pepper, carrots, basil.
Directions
Dice your ingredients. I like a long dice so it fits nicely in the wrapper. Check out the picture
In a shallow bowl, fill with warm water.
Take a rice wrapper and submerge it in the warm water until it gets soft.
Place wrapper on a cutting board or flat surface and add your ingredients. Gently roll them into a spring roll.
