I love this dressing. First let me preface, who doesn't love a Peanut Sauce? I certainly do and then I became allergic to nuts and so many of the fun things you love need to be recreated. Here's my take. Let me know what you think!! I love it with our Fresh Spring Rolls but a nice cabbage salad with shredded chicken can also be really yummy!

Ingredients

1/4 cup vegan butter, melted but cooled, not hot

1 tablespoon apple cider vinegar

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon of tamari (can use soy sauce or coconut aminos)

3 tablespoons of honey (can use maple syrup if you do not have honey)

2 garlic cloves, minced

1 inch knob of fresh ginger, peeled and minced or grated

1/4 tsp of salt

1/4 tsp of crushed red pepper flakes

1/4 cup water (or more) for a thinner consistency
