Yucca with Mojo Sauce

I feel like I say this all the time but maybe I just love food. I love love love Yucca. It is one of my favorite side dishes at Christmas. (*Side note: Yucca is a healthy, fat-free & gluten-free root vegetable that has a brown outer skin and is white on the inside.Yucca is high in Vitamins C, B & A as well as calcium, phosphorus, potassium and iron, and it's higher in fiber and potassium than potatoes)
I also think the Mojo is what makes it so special. I mean I love it at Christmas because my mom makes it soo good but I also love it at any Cuban restaurant and I also love it because IT IS SOOOO EASY TO MAKE! Try it! Let me know what you think.

Ingredients

3 -4 large Yucca
-
salt
-
12 cloves of garlic, minced or thinly sliced

1/4 cup tablespoons of olive oil

1/4 cup of lime juice

salt and pepper to taste

Parsley to garnish

Mojo Sauce
Directions
Bring a pot of salted water to boil.
Add Yucca and cook until the Yucca is fork tender. Should be about 30 minutes.
Drain Yucca and put into a serving dish
Meanwhile in a pan, saute your garlic in olive oil over medium heat. Make sure the garlic doesn't brown.
Add salt and pepper
Take off heat and add lime juice
Pour over the Yucca, sprinkle some parsley for garnish...and love it as much as I do!
