I never made this because it always looks so difficult but it looks so good when other people do it. So, here we go, let’s see how much of mess this is gonna make…

Ingredients

1 yellow onion, diced

1 red bell pepper, diced

4 cloves of garlic, minced

2 tsp of paprika
-
1 tsp of cumin
-
1/4 tsp chili powder
-
1 28oz can of diced tomatoes

5 -6 large eggs
-
salt and pepper to taste
Directions
Heat olive oil in saucepan or skillet.
Add bell pepper, onion and cook for 4 -5 minutes.
Add garlic and spice and cook another 1 -2 minutes.
Add tomatoes.
Season with salt and pepper and bring the sauce to a simmer.
With a large spoon make holes in the sauce and crack the eggs into those holes.
Cover pan and cook for 5-8 minute or until egg are cooked how you like them That’s it!! So easy! No mess! Well not a big mess!
