Shrimp Ceviche Believe it or not, I still haven’t gone into a grocery store. #autoimmune. However, I keep craving shrimp cocktail. How weird? Truth is, I always loved a cocktail hour at a wedding…shrimp galore. Or an appetizer at Mastros Steakhouse, they are jumbo. You get the point. Anyway, I keep ordering shrimp and I keep getting frozen shrimp. Not my fave. But…while raw shrimp makes the best ceviche, using the frozen shrimp for this impromptu dish was just as satisfying. Here ya go:

Ingredients

1lb frozen shrimp thawed (you can use raw deveined shrimp as well), chop into pieces

1 cup of lime juice

1 1/2 cup of white onion, diced

2 avocados, chopped into cubes

1 tomato, deseeded and diced

1 jalepeno, diced (I kept the seeds in because i like spice)

1/4 cup of cilantro, chopped

1 cup of mango, diced
-
**romaine lettuce optional, for ceviche over lettuce

**banana chips optional, for ceviche on a chip
Directions
In a bowl combine shrimp and onion and lime juice and allow to marinate in the fridge for 20 minutes.
Strain but save some of the marinade for later
In another bowl combine the avocado, tomato, jalapeño and cilantro. Add the shrimp and onions and let marinate for another 10 minutes.
So you can serve two ways. I put the ceviche in a margarita glass and ate it with some banana chips. You can also buy romaine or butter lettuce and eat it as lettuce cups. Works both ways!
