GLUTEN FREE PASTA PUTTANESCA

It wasn’t that long ago but when I was trying to figure out my diet and felt starved of all of my favorite things, eating out was just too hard. I was in Rhinebeck NY with my parents where we frequented because they have a house of there and my Lyme doctor also treats out there. They really wanted to go out to eat so they took me to this really amazing farm to table Italian restaurant called Market Street. And to my surprise they had gluten free pasta. I mean this was unheard of, I never had this option back then which is weird because now it it is everywhere. So they had a gluten free Puttanesca and I became obsessed. This is my take on it:

Ingredients

12 oz Gluten Free Pasta 1 tablespoon olive oil

3 cloves of garlic

1/3 cup chopped flat leaf parsley

1/3 cup kalamata olives

3 tablespoons of capers
-
1 1/2 tsp anchovy paste
-
1 1/2 tsp dried oregano
-
1/4 tsp of crushed red pepper
-
1 (28oz) can diced tomatoes
Directions
Bring a large pot of water to a boil
Add pasta and cook to your liking
While that’s cooking, heat oil over medium heat
Add garlic and saute for a minute
Add parsley, olives, capers, paste, oregano, crushed red pepper and saute for another 1 -2 minutes
Add tomatoes and simmer for a few more minutes
Drain your pasta, add it to your sauce.
