How many times are you telling yourself to eat a salad. “Put those lentil chips down and make a salad Traci.” Blah blah blah. Well, as Spring arrives, so many veggies are fresher and available. A few of my favorites, radish, asparagus, english peas. For me salads are great if we have a great dressing to go with. This salad goes perfect with the green goddess dressing. Don’t forget to take a look at that recipe. Enjoy the season. Enjoy your salad. Don’t be mad about the lentil chips. Sorry that was to me.

Ingredients

Baby butter lettuce

1 bunch Asparagus, diced and blanched

1/4 cup of English Peas

1 bunch of Radishes

1 - 2 endive (gives it a little crunch and bitterness)
Directions
To blanch the asparagus, just boil some water and throw your diced asparagus in for 30 seconds. You will see the asparagus will turn a very pretty green. Take it out put it on the side.
Dice your radishes.
Throw all in a bowl.
