More sides!! I've always said this about Thanksgiving, not that we are talking about Thanksgiving but if we were, I always say, I love the sides more than I love the Turkey. Sides are where it's at! It's just a plethora of goodness. And glazed carrots are like eating candy. So please have a go at them!
1 1/2 lbs of carrots
1/4 cup of butter (we use vegan)
1/4 cup of coconut sugar
2 tablespoons of maple syrup (Whole Foods has a really yummy organic maple syrup)
1/2 tsp of salt
Preheat oven to 350 degrees
Peel and slice carrots. I like a rustic glazed carrots so we cut the carrots on a bias. Adds an extra fanciness!
Melt the butter. Once melted, add the rest of the ingredients to a bowl and whisk together.
Toss the carrots in the bowl with other ingredients.
Place the seasoned carrots on a sheet tray. Bake until carrots are caramelized. I like it when they are a bit browned on top and bottom. About 15 - 20 minutes.
